Cold Soup

The main ingredients in these simple recipes are mango,cauliflower and zucchini, with surprising results. Great for people like myself who have food allergies (but can tolerate these foods). In the recipes below I usually let the cooked vegetables cool before processing.

Zucchini Soup

1 medium size mango
4 small zucchinis (small have less seeds)
salt (I use Kosher salt)

Peel zucchini and simmer in water until soft, approximately 30 minutes. Peel mango and slice the fruit off the pit. Place mango in a food processor and blend until smooth or chopped. Add zucchini and blend until smooth. Add salt to taste. Chill and serve. For a dessert, add whole fruit to the soup bowl (blueberries, strawberries, sliced bananas, or cherries).

Cauliflower Soup

1 medium cauliflower
3-4 small zucchini
salt to taste

Cut the stalk and leaves from the cauliflower. Simmer in water 30-45 minutes until tender. Peel zucchini and simmer in water 30 minutes until tender. Cool. Place cauliflower and zucchini in a food processor and blend. Add salt to taste. Serve cold. Can be eaten as is or used as a sauce with meat or fish. May also boil a sweet green pepper and add to the mixture for a different taste.

Mangonnaise

1 medium cauliflower
1 medium mango
6 grapes (any variety)
salt to taste

Cut the stalk and leaves out of the center of the cauliflower. Place in pot and nearly cover with water. Boil/simmer until tender, 30-45 minutes. Cool. Peel mango and slice fruit off the pit. Place in food processor and blend until chopped up. Add cauliflower and blend until smooth. Squeeze the juice from the grapes into the mixture (I use a garlic press). Add salt to taste. This recipe goes well with chicken or potatoes as in potato salad or large chunk chicken salad.

Plum Soup

4 plums
1 medium cauliflower
salt to taste

Wash plums and bake in oven at 360 degrees 30 minutes. Cut the stalk and leaves from the cauliflower and boil/simmer until tender, 30-45 minutes. Cool. Peel plums and be sure to remove the pits. Place in food processor. Add cauliflower and blend until smooth. May be served with fruit. The taste reminds me of yoghurt.

All of these recipes can be halved if you do not want to make a full recipe. They can easily be frozen and defrosted in a microwave. I usually store them in half cup containers and use them as I need them. Just put in microwave for 1 minute, or let sit out to defrost. It will still be cool. Stir it up to dissolve any frozen sections.
