Chocolate Sauce

1 cup brown sugar
1 cup cocoa
1/2 cup flour
1 cup water
1 cup brewed coffee or 1 cup water and 1/2 teaspoon grain coffee
1/2 tsp salt

Mix sugar, cocoa, flour, and salt together in a saucepan. Add liquid and cook over medium heat, stirring often with a wooden utensil (chopsticks, tongs, spoon). Bring to simmer and cook till thickens stirring constantly about 5 minutes. Remove from heat and use in recipes below or as a dip for fruit.

Chocolate Tofu Brownie Cake

Chocolate sauce recipe above.
1 block extra firm tofu
2 cups wheat germ

Make chocolate sauce, cool slightly. Grind tofu in food processor. Add chocolate sauce to tofu and stir until mixed. Place wheatgerm in a bowl. Add chocolate tofu and mix well. Spoon (ice cream scoop) into large muffin tins or 12 large muffin tin liners using aluminum liner with paper removed (save paper for heating them in microwave). Bake at 350 degrees for 30 minutes.

Chocolate Breadcrumb Pudding

Chocolate sauce recipe above.
2-1/2 cups breadcrumbs (stale bread ground in a food processor).

Mix chocolate sauce and breadcrumbs. Place in a baking dish and bake at 350 degrees for 45 minutes, 1 hour for a drier texture.

Chocolate Macaroon Cookies

Chocolate sauce above
1-1/4 cups shredded coconut
1-1/4 cups wheat germ (or substitute oats ground in food processor, or shredded wheat ground up).

Mix all ingredients. Roll into small balls about 1-1/2 inch diameter. Bake on lightly greased cookie sheets, 350 degrees, 20 minutes. Can press a cherry into top if desired.

Peanut Butter Pie

Chocolate sauce as above.
1 cup breadcrumbs or wheat germ.
1 block extra firm tofu.
1/2 cup brown sugar.
1/2 cup water.
1/3 cup natural peanut butter.
dash salt

Mix 1 cup chocolate sauce with 1 cup crumbs and press into bottom of pie plate. Bake at 350 degrees for 10 minutes. Meanwhile, in a food processor, blend the tofu, sugar, peanut butter, salt and water until smooth. Pour over baked crust and place back into oven for 30 minutes. Spread a layer of chocolate sauce over top and bake another 5 minutes. Cool before serving. Use any leftover sauce for dipping or make a few macaroon cookies adjusting recipe above.
